2015 Αερικό

(aeriko – English: spirit)

Aeriko is the result of our first commercial harvest, left behind to age for eight years in oak.

We chose to let it mature untouched, no corrections, just pure Commandaria left to time. Over eight years it shed its youthful brightness and grew into something more delicate, more layered, and deeply refined.

Tasting Notes

Roasted spice, spoon sweets, open into flavours of dried fruit, caramelised citrus. Smooth and almost buttery in texture, with a gentle nudge from its volatile acidity. Exceptionally long, steady finish.

Serving Ideas

Aeriko’s elegance makes it best suited to lean meats, such as game and beef. It also pairs beautifully with airy or creamy desserts like cheesecake, crème brûlée, or rice pudding. Quite honestly though, a simple bite of a salty cheese or dark chocolate could be all you need. Not a natural cocktail ingredient; more of a slow sipper.

Serve slightly chilled (~10°C).

Methodology

Terrain

Historic PDO region, Mediterranean climate, 600-800m altitude, limestone and magmatic soil.

Viticulture

Family-managed, indigenous varieties, ungrafted, goblet trained, organic, dry-farmed, hand-harvested

Vinification

Two weeks open-air sun-drying, basket pressing, spontaneous fermentation, no vinification additives, unfined, unfortified. INOX ferment, eight years in old French oak.

The Artwork

The artwork shows a lion spirit running through the vineyards, a nod to the story of Agios Mamas, same as our Διετής. At heart, they are the same wine, separated only by time. The lion now a spirt. Mature, ethereal.
