Traditionally, Mavro is rarely used on its own in Commandaria. In 2020, we set aside a small batch to let Mavro lead. The result is a fuller, more generous Commandaria, with a quietly rustic, village-wine character.

2. Tasting Notes & Serving

Profile

Carob, burnt sugar, ripe plum, and dried fruit on the nose.

The palate is warm and generous. Lower acidity gives the wine a broader, rounder feel, while gentle tannins and volatile acidity bring lift and balance.

Pairing & Mixology

Mavro has the body and roundness to work across a wide range of flavours. It can lift something fresh like ceviche, sit naturally beside roasted vegetables or baked cauliflower, or echo the earthiness of fava.

In cocktails, it can even stand in for sweet vermouth, bringing dried fruit and warmth to stirred drinks without overpowering them.

Serve slightly chilled, around 10°C.

3. Methodology

Historic PDO region, Mediterranean climate, 600-800m altitude, limestone and magmatic soil.

Family-managed, indigenous varieties, ungrafted, goblet trained, organic, dry-farmed, hand-harvested

Vinification

Two weeks open-air sun-drying, basket pressing, spontaneous fermentation, no vinification additives, unfined, unfortified. INOX ferment, 3 years in old European oak.

4. The Lore

Mavro is Cyprus’ most widely planted grape. It is used for table grapes, raisins, wine, spirits, and even cooking leaves.

The donkey on the label reflects its role as the island’s quiet workhorse.
