Kares began with a broken destemmer during harvest. We finished pressing the grapes whole, stems and all. That unplanned choice brought tannins and phenolics rarely seen in Commandaria. The wine spent years settling into itself. What first felt firm and unyielding slowly softened in oak, developing into a structured, deeply expressive wine with an earthy, savoury edge.

2. Tasting Notes & Serving

Profile

Firmly structured, with tannins framing layers of dried fruit, black tea, bitter caramel, and warm spice.

Earthy undertones build gradually through the palate, leading into a long, savoury finish.

Pairing & Mixology

Kares leans toward the savoury side of Commandaria. Especially comfortable alongside lamb, liver, wild mushrooms, aged cheeses, and slower, deeper flavours.

Serve slightly chilled, around 10°C.

3. Methodology

Terrain

Historic PDO region, Mediterranean climate, 600-800m altitude, limestone and magmatic soil.

Viticulture

Family-managed, indigenous varieties, ungrafted, goblet trained, organic, dry-farmed, hand-harvested

Vinification

Two weeks open-air sun-drying, whole-cluster pressing, basket pressing, spontaneous fermentation, no vinification additives, unfined, unfortified. INOX ferment, 4 years in old French oak.

4. The Lore

The artwork shows a winemaker entangled in vines, reflecting the harvest mishap that gave Kares its name and character.

A reminder that some of the most distinctive wines begin by accident.
