Traditionally, Mavro is rarely used on its own. Not in Commandaria, not with dry wines. In 2020 we set aside a small batch to let Mavro lead. The result is a fuller, more generous Commandaria wine, with a quietly rustic, village-wine character.

Tasting Notes

Carob, burnt sugar, and ripe plum on the nose. The palate is warm and generous. The lower acidity makes the body feel richer, rounder, decadent. Playful tannins and volatile acidity bright depth and balance,

Serving Ideas

Mavro has the body and roundness to complement a wide range of flavours; it can lift something fresh like ceviche, add weight to roasted root vegetables or baked cauliflower, or echo the earthiness of fava.

In cocktails, it even works as a stand-in for sweet vermouth, giving stirred drinks a touch dried-fruit without overwhelming them.

Serve slightly chilled (~10°C).

Historic PDO region, Mediterranean climate, 600-800m altitude, limestone and magmatic soil.

Viticulture

Family-managed, indigenous varieties, ungrafted, goblet trained, organic, dry-farmed, hand-harvested

Vinification

Two weeks open-air sun-drying, basket pressing, spontaneous fermentation, no vinification additives, unfined, unfortified. INOX ferment, 3 years in old European oak.

The Artwork

Mavro is Cyprus’ most planted grape, used as a table grape, for raisins, wine, spirits. Even its leaves are used in cooking. The donkey on the label marks it as the island’s true workhorse.
