Commandaria

2021 Διετής

(dietis – English: two-year-old)

Διετής is our flagship Commandaria and the most traditional expression of our craft. Made with the classic method and minimal intervention, it carries the character of the region in a balanced, approachable form.

Tasting Notes

On the nose, classic aromas of dried fruit and honey meet subtle baking spice. On the palate, bright acidity balances the wine’s natural sweetness, with gentle tannins giving it a playful lift.
Fruit-forward, with emphasis on the character gained from sun-drying, rather than oak maturation.

Serving Ideas

Made to be bright and versatile. It’s at home with richer, fattier proteins such as pork and salmon, where its freshness cuts through the weight. Exceptional for sauces and deglazing.

Just as versatile in cocktails, comfortable in a highball or a sour.

Serve slightly chilled (~10°C).

Methodology

Terrain

Historic PDO region, Mediterranean climate, 600-800m altitude, limestone and magmatic soil.

Viticulture

Family-managed, indigenous varieties, ungrafted, goblet trained, organic, dry-farmed, hand-harvested

Vinification

Two weeks open-air sun-drying, basket pressing, spontaneous fermentation, no vinification additives, unfined, unfortified. INOX ferment, two years in old European oak.

The Artwork

The label features a lion, symbol of Agios Mamas, our village’s patron saint. Here the lion takes on a playful style and youthful colours, reflecting the freshness and vitality of Dietis itself: rooted in tradition, yet full of life.
